To-Make List

This is a list of recipes for me to tackle. Think of it like a bucket list, but much tastier and less morbid. Give me a dish you would like to see healthified, and I’ll sprinkle my fairy dust and see what I can do. The end result should be a recipe published right here on Foodie Fiasco of your dish that is just as delicious if not more so than the original, and exponentially healthier and basically better in every way. Trust in the fairy dust.

If you would like to see anything added to the list, please leave a comment on this page.

Hi Kelly! My parents on my Dad's side are African- American with southern roots. My Grammy is from Georgia and my Granddad from Oklahoma. One thing I love that my Grammy makes is her fried chicken. Mmmmmmm just thinking of it makes me hungry and its 10:00 at night! :) Anyway, I've had the the avoid the cholesterol filled, heart clogging deliciousness since I actually wised up about my health. I see you have along list but it would be really nice to see a healthy version of famous fried chicken. All the other recipes I've looked for end up tasting way off the original and more like the lovechild of wood shavings and card board. Thanks!

3 things I would LOVE to see: Copycat "Salted Nut Rolls" - should be fairly easy, I haven't even researched it yet but I would love to see you make them. I have to get my dad off of these things. Healthy Cheesy Tomato Dip - My friend who is now limited to 1,000 calories a day (his doctor said so, because he is so overweight) really wants a healthy version of his favorite dip. He made it with a can of Rotel and half a block of Velveeta cheese (scary, I know). If you could make a healthy version of this, that would be super exciting! Copycat "Nacho Cheese Doritos" - also for my 1,000 cals a day friend. I hope to see these in the future! :)

Hey Kelly! Let me just start off by saying you are so intelligent and talented- I adore your site! I am a Vegan currently living in Tokyo, who happens to be a health nut. I try to stray from grains, I don't do sugar (love Stevia though!) and I do not use oils (well, except the occasional coconut<3) I was wondering if you could healthify and veganize the Japanese pastry bread, elon Bread? I've never eaten one before, but apparently it's level of godly is befitting of Mount Olympus. Also, healthy vegan marshmallows? o(^o^)o

Hi, I was wondering if you have any ideas on how to make oatmeal cookies/cookie dough using oats and applesauce. I wanted the recipe to be nut free and sugar free (except for the applesauce and maybe some stevia). Let me know your thoughts or if you have one! I know people make 3 ingredient oatmeal cookies using bananas, chocolate chips, and oats but i was wondering if you think applesauce would work and what the ratio would be.

Hi from Australia! Just quickly... I really love your website and it's amazing how low calorie even the most decadent desserts you make are! I love it! I am 15 years old too and I love to be healthy, and your recipes help me achieve that. Now... I was wondering, since it is nearing Christmas, could you please make a healthy/low cal gingerbread? I luuurve it :) Also, do you know any alternatives to shortbread? I love shortbread but it is often sugar and butter loaded and filled with calories. I would love to make low cal YoYo cookies but I don't think its possible. Thank you so much for everything Kelly!

I understand, Ann! You don't just want a bit of cheesecake flavor; you want to be able to microwave the whole cheesecake(and eat it too;-))! And understandably so, as the traditional cheesecake consistency is hard to replace. You will be notified as soon as we whip up something tasty! Thank you for your request!

Hi! So, I recently became gluten-free for heath reasons, and it's a holiday tradition for my family to dip the Keebler's Peanut Butter Sandwich Cookies in chocolate every year. Is there anyway to healthify the Keebler's cookies? Gluten-free Keeblers PB Sandwiches would literally make me cry with joy. Please consider, and thank you! Bridget

Hi, Bridget! That sounds like a delicious tradition, and I'm sure there's a way to nix the gluten so that you can continue to enjoy similar cookie sandwiches without the health hazards! How about the gluten-free batch of these cookies: https://www.foodiefiasco.com/healthy-peanut-butter-cookies/ smothered with some better than whatever cookie butter: https://www.foodiefiasco.com/so-take-that-homemade-cookie-butter/? Hi Kelly! I have a suggestion for an absolutely scrumptious dessert: Better Than Sex Cake. You've likely heard of it. The makeover may actually be pretty easy! I have made the original time and time again, and it's ridiculous in taste and ridiculous in easy factor. (Also in calorie, carb, sugar, and fat count...) It is made by baking a boxed chocolate cake mix, according to package directions, then poking holes in it and pouring sweetened condensed milk, along with optional caramel (like the jarred stuff for topping ice cream), all over the cake. ~I always add caramel, common!~ After it has cooled completely and absorbed all the moisture, you spread a package of Cool Whip and finish with a generous sprinkling of Heath toffee bits. The measurements are a 9x18 inch cake as boxed mixed typically yield, half a can sweetened c.milk (little over half a cup), half a cup caramel or so, an 8 oz tub Cool Whip, and a cup or so of Heath bits. I would think that you could replace the boxed cake with one of your chocolate cake recipes (wheat free? pretty please?), s.c. milk with your recipe, caramel wit your recipe, cool whip with whipping the coconut cream at the top of full-fat cans of coconut milk (this only works for me if they stood for WEEKS in the fridge), and the to

*and the toffee bits could be made by two steps, me think! First, you could probably cook your caramel recipe thing some extra minutes, enough so it wouldn't burn but would harden once it cooled, and pour it into a glass pan. After that cools you could poor on top an equal amount of melted chocolate, let cool, and break into bits. Or pulse in food processor a few seconds. I realize I could probably experiment and do all this myself, but I'd rather let an expert handle it! Last thing: if you make this, could you pleeeeeeease go for totally low carb? It's my current diet restriction. Thanks!!!!'

This is a beyond wonderful suggestion, Ann! This could be the new Better Than Better Than Sex Cake! Phew-that's a mouthful! It would undoubtedly taste more delicious because you know that you can really enjoy a slice and not worry about what you're putting into your body! This is definitely a recipe that should and likely could be made fairly easily! We are on it:-) & low carb it is!!!

Any and all gluten free breads... Starting with the ones that are hard to live without! Sandwich bread that tastes like sandwich bread. And biscuits that are not full of too much butter (I know the pieces are necessary for the slow speed melt baking, flakiness, and tenderness, etc. Basically, all the professional gluten free bread websites (which use AP GG Flour Blends) ignore healthiness altogether in attempting to make the best tasting bread. I would sacrifice some taste/texture if it meant half the calories. Thanks!

Love love love your recipes but I NEED one more that's already sort of on this list of things you want to make: horchata. Have you seen those little packets (and big containers) of horchata (and other aguas frescas) powders at the grocery store next to the mio and crystal light and all that? Well I got one that wants 3 parts water and 1 part milk per serving and that's great and all but I want to add unflavored protein to it to make it into a protein shake. I guess I'm asking you to try that powder and protein powder and liquid and give us some ratios! It'd be great if they worked for multiple powders and not just the horchata one, too. If you happen to see this and figure something out, I would really appreciate it! Thanks!
