This is just one of those magical happy recipes. I adore it.

I am considering choreographing an interpretive dance of appreciation for this cinnamon roll, but I don’t think it would do this miraculous confection justice. Perhaps a full-scale musical would be more fitting?

It must clearly indicate how amazing this recipe is. Preferably with jazz hands.

I’ve seen recipes for microwave nondescript “cinnamon bun flavored” stuff, but that simply will not do for us my friends.  This is a legitimate cinnamon roll ready in 6 minutes flat for 110 calories and it’s just for you.

Guess what? I GOT MY DRIVER’S PERMIT. I’d say that I made this recipe to celebrate a momentous occasion, but it may have been the other way around. I regret nothing.

Friendly warning: if you are a human who has a car but not an ocean between you and LA, get off the roads. Buy a private jet and use that to get around. (Don’t forget to put a microwave in it! That way you get a jet and a single serving cinnamon roll. You really can have it all.)

Most cinnamon roll dough recipes knead hours or even days (tee hee) and an intimate relationship with yeast. That doesn’t work for me. Yeast tends to be a real diva. Hours from our precious schedule for a lump of dough? Ain’t nobody got time for that!

Got 5 minutes and a mug? Sold.

Knead your adorable dough ball just a few times, and then flatten it out with your fingers. It’s easy and makes you feel like a rustic rock star.

Sprinkle with cinnamon sugar (uh yum) and roll into the most lovable cinnamon roll you have ever seen.

Now cook for just a minute in the microwave and BOOM. You go from zero to cinnamon bun in no time.

Adorn the piping hot bun with a simply fantastic but optional glaze and indulge in a moment of pure bliss.

Ingredients

  • 1 tablespoon sugar or erythritol, divided
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup white whole wheat flour OR 1/4 cup almond meal plus 1 tablespoon coconut flour
  • 1/2 teaspoon baking powder
  • pinch salt
  • 1 tablespoon applesauce
  • 1/8 teaspoon apple cider vinegar
  • 1 1/2 tablespoon almond milk (or 1 tablespoon for the almond/coconut flour version)

Instructions

  1. In a small bowl or mug, combine 1/2 tablespoon erythritol or sugar with the cinnamon and set aside.
  2. In a mug, combine the flour, baking powder, and salt. Add in the applesauce or butter, apple cider vinegar, almond milk, and 1/2 tablespoon sugar or erythritol and stir until completely combined and all the flour is incorporated. Turn the dough out onto a lightly floured surface and knead 2-3 times, or until it comes together. Flatten the dough into a rectangle that is 2-3 inches wide and as thin as you can make it, about 1/4 inch thickness. Sprinkle the cinnamon sugar over the dough, leaving a border around the edges. Carefully roll the dough up from the short side and place back in the mug. Microwave for a minute to a minute and a half, until risen and solid but not tough.
  3. Optional glaze: combine 1 tablespoon powdered sugar with 1/4-1/2 teaspoon almond milk and whisk until smooth. Drizzle over the cooked cinnamon bun. Glaze or not, it's still spectacular. Devour.

    I'm jazz-handing it out for this recipe! I think of cinnamon rolls as a dessert thing which may be because I hate breakfast foods...in the morning . They are my most favorite of recipes at any other time. Looooove cinnamon rolls!

    Hi Kelly, These look amazing but one question. In the instructions you say, "Add in the applesauce or butter", but there is no mention of butter in the ingredient list. Do either work, and if so, how much butter? Thanks! Can't wait to try it!

    Hi Kelly. First time commenter....love this recipe. Really helps the sweet craving and just one serving does the trick. Thank you! I have a question, too. Have you ever used Einkorn flour from Italy in your baking? Tried some bread but it is so dense, not good. Tried a pumpkin cinnamon cake and it was much better. Any tips on using this flour for breads, etc.? Thank you!

    Girl, I love that you get creative in the kitchen and I love your low calorie recipes, but every time Chocolate Covered Katie comes out with a recipe for something, you come out with pretty much the exact same thing the very same or next day (albeit even lower in calories). Be an original, not a copycat - I'd love to see more totally new and creative recipes instead of re-makes, and I know you've got the skills to do it!

    Baking powder + apple cider vinegar is my new favorite thing! These look so simple and delicious. Any ideas for those of us without a microwave? Do you think it would be possible in a ramekin in the oven? I think these would still be simple enough considering the time savings without the yeast.

    Oh my goodness... I've made this recipe for breakfast on three separate occasions, and each time I'm still blown away by, well, everything about it! It's ridiculously easy for even the most morning-zombie teenager to whip up, and really has changed my breakfasts recently. It's indulgent enough to be more than worth the little prep it requires yet healthy enough that I'm not feeling guilty about it later in the day! I've been following your blog for a while and love everything you make, but this one- for me at least- is a five star, over the roof, best of the best recipe. I can't begin to thank you for this spectacular cinnamon bun!

    Just made this using gluten free flour (1/8 cup +1 tablespoon brown rice flour and 1 tablespoon cornstarch + 1/16 teaspoon xanthan gum). As I don't watch calories I added a tiny little dab of coconut oil and 1 teaspoon of ground almonds to the filling because I've been dreaming of the cinnamon-nut rolls that we could purchase at my highschool for - what? 25 years?? Oh, good grief LOL You made my morning, the roll DID taste like those things! Thanks for the gorgeous idea! Oh, and I baked it in the oven at 350F for 15 minutes.

    Just made this and it turned out delicious! I didn't have erythritol so just used a packet of stevia and it seemed to work fine. Where do you buy yours? I ended up putting it in a ramekin and baking it for about 15 minutes at 350 and it was perfectly doughy (I haven't tried a microwave but I'm guessing it's a better consistency this way if you have the time to use an oven!) I'll be making this one again for sure:)

    I made this and it was delicious. Great for a quick way to sooth a sweet tooth craving. Although i put all the ingredients with correct measurements into my food diary and it said it was 280 calories per serving not 110. Still a good recipe :)

    Just made this today with a couple changes. I used the almond/coconut flour for a gluten free option, then added a tablespoon of unflavored whey protein for texture and substituted a tablespoon of egg white for the almond milk to make it less crumbly. I have to say it turned out pretty well! Thanks for the recipe :)

    Cinnamon rolls are just one of those things that you say, ah wouldn't it be nice if we could just eat them for breakfast without any guilt? Ugh, sometimes I think the world likes to pick one us.     How do you calculate your calories? 1/4 cup of King Arthur White Whole Wheat Flour is 113 calories. That alone is more than you site for the entire recipe. The almond flour version is more like 180 cal. for just the 1/4 cup of almond flour. Almond flour version with stevia and soy milk comes in at about 231 calories. I'm sure it's delicious, I'm just curious. Wouldn't want someone that is calories conscious, like me, to make these for breakfast everyday and wonder why their are packing on the pounds.

        You might want to add to your nutrition notes that you are using net calories. Someone coming to your recipe from Pinterest might not read anything else on your site to know how you came to that number.

    Oooohlala...... Single serving cinnamon rolls for 110 calories! I haven't had a cinnamon roll in years! I will surely be making this soon, especially since it is so easy and simple to make. Wouldn't this be a great birthday breakfast (mine's tomorrow so maybe that's what I will make?) I can take a long time cooking dinner and lunch, but in the morning I just want something quick and easy. Cinnamon rolls have always just been one of those things, that you wish you could eat for breakfast on a normal basis (and not just on the specialist of occasions!) You know, with the calorie count so low, theoretically you could eat 3 of these and still of consumed an average calorie filled breakfast. Wouldn't that be nice? Well, thanks for the recipe. Yum!!!

    I have tried this recipe with all purpose flour, whole wheat pastry flour, and oat flour. They all need slightly different amounts of flour but I just added until I got the right consistency to roll it out. They turned out great every time!

    Hey!! Really love your recipe, im gonna try it tomorrow for dessert!!! Whoaaa :) just one question!! How do you calcute the calories?? When I put 1/4 cup of white whole wheat flour in MyFitnessPal comes out a total of 110cal! And thats just the flour! I would really like your help so I can try new recipes with loc calories :) xx

      I had the same, 1/4 cup of the white flour I used was even 140 calories. I felt really stupid because I calculated it after I ate it...

    I bypassed this recipe 3-4 times because I don't have applesauce, before realizing butter is a replacement. You haven't mentioned that in the ingredients list.

    My dough ended up being too wet to roll up and very sticky, so I decided to just ball it up and cook it like that. I must say, it was delicious!! I think I will continue to make it this way (like cinnamon swirl bread) because it is easier and less of a mess. I was supposed to eat it once I sat down, but it was gone before I even poured my coffee!! It was so yummy!! I will definitely double the recipe next time. Thanks for another great recipe!!

    Question about ingredients. I followed the recipe exactly but had a very stick mess which I had to add a lot of flour to it before I could roll it out. Is this normal? It turned out very tasty but a bit chewy which I know was the extra flour but if I had not added it, it would of just been a stick sludge and not a dough. Thank you. Please help I want to make this again and get it right!

      I had a somewhat similar experience and want to measure how much extra flour I put in when kneading. I don't think mine was overly chewy, though. The appeal of this recipe for me is -- single serving, and lowfat. I have had a hard time finding both in a recipe and have wanted something easy like this for breakfast treat every now and then. This works! I am going to try some of the other single serves on this site.

    Tried it today, definitely need t retry to,orrow. Forgot the rest of the sugar in the dough so its little bland. But anyway, i had to add a tn of flour, the dough as it was was way too sticky and runny. Do you know why could that be? Yours looks ok haha :)

    Its 3 a.m. and you got me thinking about breakfast. I'm a novice at baking in general and in a mug especially. Gluten free is the name of the game now and I've read that coconut flour requires a lot of liquid / eggs. Will I need to increase the applesauce or make any other modifications? I know its been awhile since you posted this recipe but I'm hoping you'll see this question. Thanks for the great work you're doing

Cinnamon roll is one of my favorite things in life and I would really definitely try this recipe. Just one question though - is there anything I can use as almond milk substitute for the glazing?       Hi Lilly! I haven't personally made this in the oven, but I would try baking it at 350 for 10-15 minutes, taking it out when it's firm, thoroughly warm, and slightly golden. Best of luck!

    It was SO good, it tasted JUST like the canned cinnamon rolls I used to eat before going vegan (It was one of the foods I thought I would never be able to eat again) so imagine my joy when I had my first bite. I used 1 tablespoon of vegetable oil (any neutral oil is good) instead of applesauce and it was fine just less healthy and a little greasy so no worries about it sticking. For the glaze I had NO powered sugar in sight so I used 1/4 cup brown sugar (packed) with maybe about 1/2 cup of Almond milk ( I eyeballed it- I used vanilla almond milk, but whatever you got) and added a good squirt of agave (OPTIONAL) and cooked it down (As long as you want- or as long as you have patience for) and just added cornstarch until it was at how I liked it. ALSO I cooked it in the oven on 350 Fahrenheit for 17 minutes, but i suggest doing 10 and keeping an eye of it (It didn't get golden brown on top but it did on the bottom, the top just got a little hard) SO BE CARE-FULLL it's so easy to over cook!!! I poked it with a stick to see if the center was bread-y it didn't come out that pretty the first time I made it so @we.are.animals_3 on insta if you want to see a pic when I remake Love this recipe, you should make it even if you're not vegan, definitely in my bookmarks forever (or at least until I remember it lol)

    any advice?? my roll turned out super dry...i used buckwheat gluten free flour, cashew milk, apple sauce, baking soda, stevia, apple cider vinegar and microwave etc...

      Hi Al! Thank you for making this and I'm sorry it came out dry. I've never worked with buckwheat flour so that may be the culprit. If you want to use buckwheat flour in this, I suggest subbing half or all of the applesauce for melted butter. Hope this helps!

    I love this recipe! I used 1/2 a tablespoon of Egg-Beaters instead of the applesauce and it worked great! Instead of forming the dough into a cinnamon roll I shaped it into a donut shape and it grew bigger because I microwaved it on a plate instead of a mug. This recipe is a major score!

    Hi!! I made these this morning...I don't know what I did wrong, but all I ended up with was a mug-ful of crumbs!! Tasty, but a bit dry, and not at all what I was hoping for..LOL I am trying again, but this time with one egg, for binding!! I will let y'all know wha t happens!!
