“All for One” Grain Free Lava Cake

“All for One” Grain Free Lava Cake

Ingredients

  • 1 egg white OR 1 1/2 Ener-g egg replacer mixed with 2 tablespoons water
  • 1/4 cup cocoa powder
  • 2 tablespoons mashed banana, unsweetened applesauce, or canned pumpkin
  • 1/8 teaspoon baking powder
  • pinch salt
  • 3 tablespoons erythritol or sugar
  • 3 tablespoons almond milk
  • 1/2 tablespoon chocolate chips
  • 1/2 tablespoon unsweetened almond milk

Instructions

  1. In a large mug, beat egg white or egg replacer. Add in the rest of the ingredients and stir until uniform and no dry pockets remain. Set aside.
  2. Combine the chocolate chips and 1/2 tablespoon almond milk in a small cup. Microwave for 45 seconds and stir. If you're not a microwave user, feel free to do this on the stove top.
  3. Scoop out 1/2 of the batter in the mug, make an indent, and pour the melted chocolate into the indent. Carefully cover with the other 1/2 of the batter. Cook in the microwave for 2 1/2 to 3 1/2 minutes until firm. Alternately, you can bake in the over at 350 degrees Fahrenheit for 15-20 minutes. Devour.

    Hey! If we dont have the almond milk, can we use normal cow milk instead? Also, is the banana necessary? The grocery store is far and I have no bananas at home! :( HELP NEEDED ASAP!

      Hello! You can definitely use cow milk, and applesauce, pumpkin, or butter can work in place of the banana.

    Tried this today and all I can say is Genius! I substituted Stevia for the sweetener and used light coconut milk. It was pure chocolate heaven. I am planning on making a batch in the oven to share with friends. There are several recipes on your site I want to try, all interesting solutions to working with food allergies and/or lowering calories. Thank you for sharing your awesome recipes, you are one talented young lady.

    I made this with butter instead of fruit and was too lazy to make the sauce. So I just pushed some chocolate chips down in the batter. It was really yummy. Thanks for the recipe!

    I'm really sorry if this is a stupid question...but I saw your first recipe (the one that has flour in it) and was excited because it didn't have eggs. But I needed gluten free also so I clicked through to here and it has the egg replacer. Can I use flaxseed at all? I'm still learning about how to do life egg free and what things work together.

      Hi Megan! The brand of egg replacer I use (Ener-g) is actually gluten free. Also best of luck on navigating a new dietary parameter! It's not easy and congrats on doing it. I hope my recipes can help. :)
