Ingredients

  • 3 Tablespoons Ener-g egg replacer mixed with 12 Tablespoons water (I have not tried this with actual eggs and therefore am not sure how it would work out.)
  • 1/3 cup applesauce
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 Tablespoon minced garlic

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper, foil, or a silicone mat and set aside.
  2. Mix together egg replacer or egg, applesauce, minced garlic, and salt. Add in coconut flour and baking powder and stir until completely combined and thick. (Yes, this means about 2-3 minutes of stirring. Don't worry, it's worth it.)
  3. Turn the dough ball onto a lightly floured surface and knead until it comes together. about 2 minutes. Using a sharp knife, cut the dough into four equal parts.
  4. To form the pretzels, roll one of the balls of dough into a long thin rope. Be careful as this grain free dough is more delicate than its wheat counterpart. Put the two ends of the rope next to each other to form a tight U shape. Twist the ends together once so the twist is about half way down the U. Bring the two loose ends down to the loop at the bottom below the twist. Tuck the two ends under the loop and press so the dough adheres to itself. Gently pull the pretzel so the dough becomes thinner and the pretzel becomes larger to form a nicely sized pretzel.
  5. As for other shapes, you can bake the ropes for pretzels sticks, knot the ropes for pretzel knots, cut the ropes into little equal sized pieces for pretzel bites, or roll the dough into balls and scour the top for pretzel rolls.
  6. Lay the pretzels on the prepared baking sheet and spray with cooking spray (this helps the toppings stick). Dip the sprayed pretzels in a shallow bowl filled with your topping of choice (salt or cinnamon sugar) and place back on the baking sheet. Bake in the oven at 400°F for 15-20 minutes, or until firm and slightly golden, then broil for 30 seconds or until golden. Devour.

What sort of coconut flour did you use to keep these at 71 calories per pretzel? Most brands are between 300 and 400 calories for 1/2 cup. Even on the low end: 300 (coconut flour)+ 35 (1/3 cup apple sauce)+ 23 (egg whites)+ 45 (1tbsp minced garlic) with 0 calorie baking powder = 403 calories total which would be just over 100 calories per pretzel. These are the lowest calorie ingredients I could find at the store or online. How did you get yours to be 71 calories per serving?

Hi Nikki! I'm sorry about the confusion. Here is a post on how I calculate calories.

I love you. I decided. I currently avoid walking past Wetzels pretzels at the mall because the smell makes me want to slap a moose, or strangle a tree and then chaining myself to it so I don't go and buy a pretzel. I know eating one of those would make me gain 4 pounds instantly. At least I know what they taste like, I had one last February, I remember the exact day*drools* I shall try this recipe. It looks fantabulastic (I thought I was the only one who used and loved this word, but I am not alone! yay!) Your blog makes me think you are a liar, to be perfectly honest. The recipes are all under 200 calories, that I have looked at so far and they look SO GOOD. I'm going to go eat lunch now. I think that would be a good idea.

Could you put the carbs into the description as well? That would be a big help. Great page!

Hi - I was wondering if you *have* to put in the garlic and if it would affect the outcome if I leave it out. I appreciate your time!

Hi Donna! You are more than welcome to leave out the garlic, but the taste may be a bit bland. Hope that helps!
