“All for One” Single Serving Banana Bread

Haha! I remembered!

My friends, today is August 27, National Banana Lover’s Day, and I did not forget about it. I actually posted a recipe that has bananas in it on National Banana Lover’s Day.  Yes, it is still technically August 27. This will be posted before midnight. Do not bash my delusions of punctuality.

So earlier today I decided I was going to be very productive. I was going to get a a lot done. I would answer my emails, test recipes, type stuff, and end world hunger. I got this.

I decided I was going to change my blog header to make it all schmancy, and being the extremely technologically savvy person I am (just go with it), I would do it all without breaking a sweat. That’s just how I roll.

So I opened up a file, confidently punched in some fancy codes, and pressed the big save button. Achievement!

Um, no. Not achievement. I successfully crashed my server. Go me.

So I frantically called up the tech wizards at the Hogwarts of web hosting (A.K.A. Bluehost) so they could wave their wands and make the scary tech monster go away. The Dumbledore-worthy guy on the other side of the call politely handled my incompetence and got my site working again. But I did manage to throw some fancy words at him to make myself think I knew what I was doing. He totally wasn’t buying it, but you know. Whatevs.

Productivity Take 2: I banged my head repeatedly on the table and begged Mercury to get out retrograde so I could make something work. By some miracle, it did work. I don’t know how, but darn it I am going to take credit for it, thankyouverymuch.

So since I am being so productive, I thought I would keep tapping away on my computer and do other productive-person stuff. Like mindlessly surfing Pinterest for 2 hours until I realize it 8 o’clock and I should probably eat some dinner.

But then I remember… it’s National Banana Lover’s day! As long as my food has bananas in it, I can eat whatever I want! It’s Banana Day, it’s Monday, and I ate banana bread for dinner because, well… I can. And it was tasty. Very tasty. So there.

And now it’s 10:30 and I am telling you about my extremely nutritious dinner. It’s my fault that you probably can’t enjoy my lovely banana bread on Banana Day, so I am giving you permission to call it dinner for tomorrow. And the next day. And every day after that.

Hey, it’s legit healthy, okay? It’s vegan, low carb, gluten free, grain free, low carb, and only 110 calories for the whole thing. And it’s got potassium, so it’s cool to eat for dinner.

So maybe I should be productive more often! It does taste pretty darn awesome, if I do say so myself.

This recipe could not be simpler. All you do is mix all the ingredients, microwave for a few minutes, and voila! Banana bread!

“All for One” Single Serving Banana Bread

Ingredients

  • 2 Tablespoons coconut flour
  • 1/2 teaspoon baking powder
  • pinch cinnamon
  • 2 egg whites OR 1 Tablespoon egg replacer plus 4 Tablespoons of water
  • 1/2 banana, mashed (about 1/4 cup)
  • sweetener to taste (I used 1 packet of stevia.)

Instructions

  1. Mix all the ingredients large microwave-safe mug and microwave for about 2 minutes, keeping a close eye on it to cook it shorter or longer as needed because microwave cooking times vary so greatly. (Just note: It took 2:30 in my microwave, but my microwave is older than I am.) Let cool for a few minutes.

    Yum!!!! Seriously yum!! I can't wait to try this! One question...when you make your microwave cakes, do you use a ramekin to bake them in? Yours come out so much prettier than mine. Thank goodness for the Hogwarts blog gods who put you back online for us, and thank goodness for Banana Day!!!!

      You are so sweet, Erin! I have a favorite mug I use when I make microwave cakes. It's a wide, tall tea cup. A deep, round ramekin would probably give the same effect, but I haven't tried it myself so I wouldn't know. Thanks again, and I hope this helps!

    This looks so good! Banana bread normally goes pretty quick at my house, so I normally make a couple of loaves at a time, but this would be perfect for when I was craving it and didn't have a lot of time on my hands.

      Thank you so much for the question, Jessica! Unfortunately, you can't sub out coconut flour for other flours if you expect the results to be edible. You can buy coconut flour at places like Whole Foods or online at iHerb.com or Amazon. Thanks again, and I hope this helps!

    If you don't have coconut flour, would unbleached flour or garbanzo bean flour or whole wheat pastry flour work?

      Hi Jori! Unfortunately, no, you cannot substitute coconut flour. You can purchase it at places like Whole Foods or online at iherb.com. Hope this helps!

    Hi Kelly! This looks delish!!! I know it's been awhile since you posted this recipe, but I just have a super quick question! For the egg replacer, could I use flaxseeds or chia seeds? If so how much do you recommend? Thanks! You're amazing :)

      Hi Bethany! I use Ener-g brand egg replacer. I haven't tried flaxseed or chia, but I would use 2 eggs worth and see how it goes. Hope this helps!

    Hey, I just wanted to tell you how much I LOVE this banana bread. It's so simple but so tasty at the same time. I have this for breakfast and I make it the night before and leave it in the fridge so all I need to do is stick it in the microwave in the morning, it's quicker than a bowl of cereal! (ps After I've mixed the ingredients I stir in a handful of blueberries for some extra fruity goodness!) I can't wait to try out your other gluten free recipes! Claire (UK)

    Hey! I love your blog, btw. I love cooking and I love being healthy, so this is perfect! I have a question, though. I tried making a few of your cake-like recipes (such as this one), and they would always cook on the outside, but the inside would be all mushy and not cake like at all. I've been finding that a lot of things I try to make with ener G do this. Is there any secret to using it, or am I just a horrible cook!? I've even tried baking it in the oven, and it still turns out the same way. Any advice?

      Thank you for your support, Allie! Sorry for all of this mushy-cake madness! What brand of coconut flour do you use? Sometimes there are a few odd ones that don't bind as well as Bob's Mill, for some reason. If the brand of flour isn't your culprit, try using a bit less banana/add a pinch of arrowroot. Both of those options should help to decrease mushiness. Also, be sure to add the water along with the egg substitute! Another idea that may help is allowing the banana bread to cool a bit more, which would perhaps allow it to solidify. I hope that these suggestions help; please let us know how your future Foodie Fiasco experiments go:-)

    This was delicious! I doubled the recipe and used whole wheat flour instead. I didn't add any sweetener, but it was still really sweet. My only problem was that even when I doubled the recipe, it didn't look as big as the banana bread in your picture. Why?
