Psst. Hey.

Come here. Closer. Clos- okay stop. That’s close enough.

I have this secret that I want to let you in on. It’s a big deal. Very hush hush.

You can make cookies in the microwave. I know. I couldn’t contain myself either.

Okay, so the bad news is that I may have potentially blew that secret when I made cookies in the microwave last time, but hey. No biggie. What is a secret if no one knows about it? Haha, now you’re confused. Let’s change the subject.

When I did find out this magical secret, I became a little cookie fiend. If I have ever learned one thing in my years of life, it’s that making grocery lists in the name of frugality is stupid. If I have ever learned a second thing in my years of life, it’s that you should always add peanut butter to everything. Especially cookies.

So if you take our little secret and the second thing I have earned in life, you get this… masterpiece.

Almond milk, meet your new dunking love.

“All for One” Peanut Butter Cookies

Cookies. Peanut butter flavored, to be exact. In the microwave. Just for you. I say no more.

Adapted from my World’s Healthiest Peanut Butter Cookie

Makes 1 serving (10 cookies!)

Nutritional Info

Serving size: 1 recipe (10 cookies)

Calories: 100

Fat: 4 grams

Ingredients

1 tablespoon of peanut butter (I used Better N Peanut Butter, for a lower fat option.)

3 tablespoons of unsweetened almond milk, or milk of choice, divided

2 tablespoons of coconut flour

pinch salt

1/4 teaspoon vanilla extract

1/8 teaspoon baking powder

sweetener to taste  (I used one packet of stevia.)

Directions

Add peanut butter and 1 tablespoon almond milk into a small bowl or cup, and nuke for about 30 seconds, or until peanut butter is melted. Give the mixture a stir, and add in coconut flour. Stir in salt, vanilla extract, baking powder, and sweetener to taste. Add remaining almond milk, one tablespoon at a time, adding more or less as needed to create the perfect “doughy” consistency.

Drop dough by tablespoon or teaspoon, depending on how big you want them, on a greased microwave safe plate and flatten into cookie shapes. Microwave for 45 seconds to a minute, watching them carefully, looking and smelling for done-ness. Let cool for a minute or two to allow the cookies to firm up before inhaling them all.     I'm allergic to coconut. Is there another flour I could use here? Have you tried it with any other flours and it worked successfully? Thanks!

    Hi! These sound really good! And I've had the gastric bypass, so 100 calories is a must for my snacks! I just have one question. I can't find coconut flour, can I substitute it for a different flour? Thanks!

      Wishes for a speedy recovery! Unfortunately, I haven't tried another flour with this recipe. I have a chocolate chip version with whole wheat flour, or you can get coconut flour online. Good luck!

      Hi Lucy! I don't think you could use peanut flour because it would change the texture. The Better n' Peanut Butter is it's own substance, and is not just peanut flour and water. I love it! It's only 50 calories a tablespoon.

    I just tried these last night. However, mine were higher calorie and higher fat because I use natural, unhydrogenated peanut butter - which for a long time has been my favorite choice. Not to debate, but lowfat peanut butter doesn't work or appeal to me. So for anyone like me, the alternative I used does work - @ 150 calories, 10 fats. Very nice!

      I haven't eaten low fat peanut butter in a long time-- I got hooked on the real stuff several years ago and never looked back. So happy to hear you tried these with natural peanut butter and enjoyed them!
