This is the crowning jewel in my cookie crown.

From now on, this is the it cookie. We will accept nothing less. 1 cookie = 25 calories of rich, chewy yet slightly crunchy, sweet yet slightly salty, peanut buttery perfection.  This changes everything.

And no words can do them justice.

Healthy Peanut Butter Cookies

Ingredients

  • 1/2 cup unsweetened applesauce, mashed banana, or butter
  • 1/2 cup sugar OR erythritol
  • 1/2 cup brown sugar OR erythritol plus 1 teaspoon molasses
  • 1/2 cup peanut butter {use Better n' Peanut Butter for a lower fat version}
  • 1 egg {or 1 1/2 teaspoon Ener-g egg replacer mixed with 2 tablespoons water}
  • 1/2 teaspoon vanilla extract
  • 1 cup white whole wheat flour {see note below for gluten free}
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone mat and set aside.
  2. In the bowl of a stand mixer, combine the applesauce or banana or butter, sugar or erythritol, brown sugar or erythritol plus molasses, and peanut butter. Beat together until thoroughly combined. Beat in egg or egg replacer and vanilla extract. Add in flour, salt, and baking soda and stir to combine.
  3. Drop the cookie dough by rounded teaspoon amounts onto the prepared baking sheet. Lightly flatten the balls in a criss cross pattern with a fork. To prevent it from sticking, lightly moisten the fork and coat it with flour before flattening the cookies. Bake in the oven at 350°F for 8-10 minutes. Let cool on wire racks and devour.

Notes

For a gluten/grain free option, use about 1-1/4 cups almond meal in place of the wheat flour. If the dough is too wet, add in more almond meal 1/4 cup at a time.

For a paleo version, use almond butter.

For a nut free version, use sunflower seed butter.

    Love PB cookies :) I'll try these with normal peanut butter and gluten free all purpose flour. Currently I'm in denial of the fact that august is half over. Eating more cookies helps...

    can you use PB 2 in this recipe ? wouldnt that bring the calories down ? also...... did you calculate the calories with wheat flour ? you didnt say.

      Ann H., I also couldn't find out which products contain these calculation, so I do it by my own using this site: http://happyforks.com/analyzer. When you use one of the alternative products which are given in recipe, you can easily know nutritional information. Bythe way, it's great, easy and fast recipe for cookies!

    Oooooh! Yum, yum, yum! I'm addicted to pb and cookies for that matter :D - so healthy pb cookies are perfect for me! I could use a flax egg in place of the egg too, right? Thank you so much girlie - you are AWESOME!!!

      Thank you for your kindness, Kimberly! You could try a flax egg, but those tend to be fickle so I would be wary about making the substitution. If you want to keep the recipe vegan and true to taste, I would recommend investing in a package of egg replacer! The product is well worth it:-)

    I followed all of the instructions exactly except for I used egg whites instead of egg replacer. My cookies came out super soft and cakey. Was it the egg whites or was it something else?
