Now really, what rock have I been living under?

This is the first time I have ever used a crock pot for anything. Ever. How I have functioned properly all these years remains a mystery, but nonetheless, I am in the pink now. I know. That was a close one.

There are just so many things about this recipes that get me excited I can’t even tell you! First off, I love how I can just make a big batch on Sunday evening and have breakfast for hectic mornings ready at hand for the rest of the week.

You know how sick you get of some make ahead recipes about half way through the week? Ugh. Me too. Good thing this isn’t one of them.

Plus, the prep time is like 2.7 minutes. Almost nothing, especially for how much this recipe benefits you, your punctuality, and your taste buds. It’s a win win win.

Think living fourteen years without a cock pot is insane? You haven’t heard what I agreed to do this week. I am paddling down the Colorado River in canoes along with my freshman class.

Let me repeat that. I will be paddling down a river. With questionable food. And no real bathrooms. For four days. With 200 ninth graders. No cell reception. No electronics. No escape. Please help.

I know it’s for my enrichment and immersing and my betterment as a person and as a positive contribution to society and all that jazz, but frankly, I’m  scared as all get out. Who the heck talked me into this?!?

But you know what makes this whole thing worse? I was given fair warning. My friend and classmate (hereafter referred to endearingly as “The Boy”)) told me not to go. He’s been at this school longer. He’s brilliant. He’s got great hair. Despite this, did I listen? Of course not.

It will be fun, I said. It will be enriching, I said. It will be good for me, I said. I won’t get cold feet, I said. The Boy nods. I’m convinced. He’s not. Moral of the story?

Don’t argue with a boy who has better hair than you.

So… yeah. I did agree to go and I’m going, so I will be without technology until 7pm on Thursday. I know. What am I thinking?

But now I can’t respond to your wonderful comments/emails until Thursday and I won’t have a post up until then either. (!) I’m really sorry for the delay, but I can’t wait to talk to you again!

Well, The Boy was right. Figures.

One batch equals four days of breakfasts! To avoid getting stuck in a rut, have fun playing with toppings and mix-ins during the week. Peanut butter! Pumpkin! Nuts! Breakfast is the most important meal of the day, so why not make it the most fun?

Crock Pot Coconut “Oatmeal”

Ingredients

  • 1 cup unsweetened shredded coconut (I used reduced fat.)
  • 2 cups unsweetened almond milk
  • 2 cups water
  • 1/4 cup plus 2 Tablespoons coconut flour
  • 1/4 teaspoon liquid stevia (You can add more or less, depending on how sweet you like things.)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Instructions

  1. In a crock pot, whisk together the unsweetened shredded coconut, almond milk, water, cinnamon, and 1/4 cup of coconut flour until thoroughly combined. Cover and cook in Low for 8 hours or overnight. In the morning or after the 8 hours, turn off heat and whisk in the stevia, vanilla extract, and remaining 2 tablespoons coconut flour. Store in the refrigerator and eat as desired. Top with peanut butter!

    Please specify that you are using fake vanilla extract, other wise it won't be gluten free. Real vanilla extract is make with grain alcohol and depending on tolerance levels could affect someone. Otherwise, cool recipe!

      Thank you so much for sharing your knowledge, Nick! So yes. Use gluten free vanilla extract if you want the recipe to be 100% gluten free.

      Unfortunately your comment regarding alcohol based extracts is entirely unfounded. Here is the entire internet's consensus online: Alcohol-Based Extracts There is no reason to avoid flavoring extracts, such as vanilla extract because they contain alcohol. The alcohol in these products is distilled and pure distilled alcohol is gluten free regardless of the starting material. Remember, during the process of distillation the liquid from fermented grain mash is boiled and the resulting vapor is captured and cooled. This causes the vapor to become liquid again.
