Hello friends. I’ve been thinking of you.

Way back in 2011, I made this blog as a way to share my love of cooking with the world, but underneath, it really was a way to cope with my mom’s cancer diagnosis. I never mentioned this on this blog but I am ready to share it now – after a long and profoundly brave fight, my mom passed away. She was surrounded by loves ones, some of the many people she touched and inspired during her remarkable life, although it was too short.

So many of you supported me during this time, and I am forever grateful. I was, and continue to be, so proud and touched by the community we’ve fostered here together. I set out to make Foodie a place where healthy and delicious recipes could be accessible to everyone, and it has been a tremendous honor to see the impact, however small it may be, that this site has made in the lives of some of my of readers.

In many ways, life has been good to me. I have many blessings to be happy and grateful for, and among them is the time I have spent here with you. 
Since my last post, I’ve actually tested many recipes knowing that I would share them here, so I am very happy to bring them to you now.

I have no idea who is reading this. Bless you if you are. Please know how grateful I am for you and how much your presence has touched and changed me. Foodie Fiasco has been such an important part of my growing up, and I am very happy to be back to share the recipes I’ve worked on for you.

I wanted to start with a personal favorite. This recipe combined two of my favorites – my single serving brownies and my single serving cheesecake. I’m all about instant gratification desserts, so I hope you enjoy.

I love you all and I am thrilled to be back. I brought brownies to say thank you for being you.


Nutritional Breakdown

Calories (using whole wheat flour for low calorie version)

3 tablespoons erythritol (0) + 1 tablespoon white whole wheat flour (25) + 1 tablespoon unsweetened cocoa powder (10) + 1 tablespoon unsweetened applesauce (6) + 1 egg white (25) + 1 tablespoon nonfat plain Greek yogurt (8) + 1 tablespoon light cream cheese (35) = 109 calories for the whole darn tray!!

Net Carbs (using almond flour for low carb version)

3 tablespoons erythritol (0g) + 1 tablespoon almond flour (0g) + 1 tablespoon unsweetened cocoa powder (1g) + 1 tablespoon unsweetened applesauce (2g) + 1 egg white (0g) + 1 tablespoon nonfat plain Greek yogurt (1g) + 1 tablespoon light cream cheese (1g) = 5g net carbs for the whole darn tray!!

Protein

3 tablespoons erythritol (0g) + 1 tablespoon white whole wheat flour (1g) + 1 tablespoon unsweetened cocoa powder (1g) + 1 tablespoon unsweetened applesauce (0g) + 1 egg white (6g) + 1 tablespoon nonfat plain Greek yogurt (1g) + 1 tablespoon light cream cheese (2g) = 11g protein for the whole darn tray!!

Yield: 1 huge serving
Ingredients
  • * 3 tablespoons sugar or erythritol
  • * 1 tablespoon white whole wheat flour or almond flour
  • * 1 tablespoon unsweetened cocoa powder
  • * ¼ teaspoon baking powder
  • * ⅛ teaspoon salt
  • * 1 tablespoon unsweetened applesauce
  • * 1 egg whites OR ½ tablespoon egg replacer mixed with 2 tablespoon water
  • * ¼ teaspoon vanilla extract
  • 1 tablespoon Greek yogurt
  • 1 tablespoon light cream cheese
  • ⅛ teaspoon lemon juice
  • ½ packet stevia
Instructions
  1. Preheat oven to 350°F. (Or not, if you want to use the microwave.)
  2. Mix sugar or erythritol, flour, cocoa powder, baking powder, and salt in a small bowl. Add in applesauce, egg replacer mixture, vanilla, and almond milk (if using wheat flour) and stir until combined. Set aside.
  3. In another small bowl, combine the Greek yogurt, cream cheese, and lemon juice and stir until smooth. Sweeten to taste. (I used half of a packet of NuNaturals brand stevia, but you can use whatever sweetener you like.)
  4. Spread the batter into your greased baking dish of choice. Spoon cream cheese mixture onto the batter by teaspoonfuls and cut through the mixture with a knife to make a swirl design. Don’t fret over the aesthetic of your swirls, they don’t need to look perfect. It’ll be delicious either way!
  5. Bake in the oven at 350°F for 18-25 minutes. Or microwave for about 1 minute and 30 seconds. Whichever method strikes your fancy. Let cool for a few minutes and devour.

    Hi! I don't think I've ever left a comment on your site before despite being a frequent visitor in the past, but I was surprised to see an email from you in my inbox. I recognized the site name immediately even though I admittedly have not visited in quite some time. The last time I was here was probably around the time of your last post when I was still with my ex and he had special dietary needs that your recipes helped me accommodate. I know you don't need to know all that, but it's just interesting to see what can change after 5 years, and I thought it might be nice to let you know that people are still here :) I am sorry for your loss, but thank you for sharing the story about your mom, and thank you for sharing this recipe as well as all your past recipes. I hope time has been good to you, overall. :)

    Good to see you back on your website with updates., My condolences for you as you grieve the loss of your mother. You have been often in my thoughts. This has been and is a favorite recipe spot for me. Your single serve recipes are really helpful.
