Single Serving Cheesecake Brownies

Ingredients
  • * 3 tablespoons sugar or erythritol
  • * 1 tablespoon white whole wheat flour or almond flour
  • * 1 tablespoon unsweetened cocoa powder
  • * ¼ teaspoon baking powder
  • * ⅛ teaspoon salt
  • * 1 tablespoon unsweetened applesauce
  • * 1 egg whites OR ½ tablespoon egg replacer mixed with 2 tablespoon water
  • * ¼ teaspoon vanilla extract
  • 1 tablespoon Greek yogurt
  • 1 tablespoon light cream cheese
  • ⅛ teaspoon lemon juice
  • ½ packet stevia
Instructions
  1. Preheat oven to 350°F. (Or not, if you want to use the microwave.)
  2. Mix sugar or erythritol, flour, cocoa powder, baking powder, and salt in a small bowl. Add in applesauce, egg replacer mixture, vanilla, and almond milk (if using wheat flour) and stir until combined. Set aside.
  3. In another small bowl, combine the Greek yogurt, cream cheese, and lemon juice and stir until smooth. Sweeten to taste. (I used half of a packet of NuNaturals brand stevia, but you can use whatever sweetener you like.)
  4. Spread the batter into your greased baking dish of choice. Spoon cream cheese mixture onto the batter by teaspoonfuls and cut through the mixture with a knife to make a swirl design. Don’t fret over the aesthetic of your swirls, they don’t need to look perfect. It’ll be delicious either way!
  5. Bake in the oven at 350°F for 18-25 minutes. Or microwave for about 1 minute and 30 seconds. Whichever method strikes your fancy. Let cool for a few minutes and devour.
