Ingredients

  • 1 cup unsweetened almond milk
  • 1 1/2 tablespoons cane sugar or erythritol OR 1 tablespoon maple syrup
  • 2 tablespoons flour of choice (I used coconut flour.)
  • 1 tablespoon nutritional yeast
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • pinch of salt
  • 4-6 slices bread (You can use whatever fits your taste/dietary preferences,or simply what you happen to have on hand. I used a whole wheat 45 calorie bread.)

Instructions

  1. In a blender, puree almond milk, cane sugar or erythritol, flour, nutritional yeast, cinnamon, vanilla extract, and salt until smooth and thick. Pour into a shallow bowl.
  2. Heat a greased non-stick skillet over medium high heat. Coat one of the bread slices in the almond milk mixture and place in the hot skillet. Cook until golden and crispy, 2-3 minutes on each side. Repeat with the remaining bread slices or until you've used up the almond milk mixture. Serve with maple syrup for the breakfast of champions. Devour.

    I love that idea with the nutritional yeast! Never thought of putting it into a sweet dish. I'll definitely try this with coconut flour. You're one inventive girl!
