Ingredients

  • 3 tablespoons Ener-g egg replacer mixed with 12 tablespoons water, or 6 eggs
  • 1/3 cup unsweetened applesauce
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup erythritol or sugar
  • 4 tablespoons fillings (such as chocolate chips, cinnamon sugar, jam, etc.)

Instructions

  1. Preheat oven to 400F.
  2. Mix together egg replacer or egg, applesauce, and salt. Add in coconut flour, baking powder, 1/4 cup erythritol or sugar,, and 1/4 teaspoon of cinnamon. The batter should look somewhat like unkneaded dough.
  3. On parchment paper or a silicone mate, turn out the dough and knead until it comes together, about 1-2 minutes. (This is not intimidating at all!) Now, you can either top it with another piece of parchment paper and roll it flat, or smoosh it down to a uniform thin-ness like I did. You should have a big, thin square of evenly thin dough.
  4. Using a pizza cutter, cut the dough into 8 even rectangular pieces. Top each of them with a tablespoon of your filling of choice, leaving a 1/2 inch border. Place one of the remaining dough pieces on one of the topped pieces and crimp the edges together with a fork to seal. Place on the prepared baking sheet. Repeat with remaining pieces. Bake in the oven at 400 degrees Fahrenheit for 15-20 minutes, or until golden and firm. Let cool and devour.

        My dough was just sort of too moist yet really crumbly as well? I tried putting more flour on it when I got it on my parchment paper, but it may have just been too late at that point. Honestly, I ended up just kind of baking a big glob of chocolatey, cinnamony, brown sugar-y, coconut flour dough and it tasted very good when it was done, but it most certainly wasn't pop tarts.

          I've worked with gluten free dough before and the trick seems to be to work it like play dough in your hands. Really warm it up and work it through and through. The more you work it through, the better it'll work out for you. It can be a little frustrating, but it's completely worth it! :-)

    I am envisioning your homemade Nutella recipe as a filling for this. On a side note, is there any way you could add total carbohydrates to your nutrition info? I suppose I could calculate it myself, but you're already doing the research (and I'm feeling a bit lazy). Thanks. :D

      Using Ener-g egg replacer, there are about 40 carbs per pop tart! Three tablespoons of Ener-g egg replacer has 45g of carbs, 1/3 cup of unsweetened applesauce has about 9, there's 64 g of carbs in 1/2 cup of coconut flour, and roughly 40 grams of carbs for the filling(depending on your choice, this is calculated with raspberry jam) for the whole batch. Hope that this helps:-)
