Hi!

I have big, big news. I have decided to become vegetarian. Again.

I’m going to eat up the meat in the house and figure out my new favorite meatless protein and then I’ll be off on my herbivore eating habits. Which reminds me; I have a new food dream. I want to be vegan. (You rock, Angela! )

I know this may not be a realistic short-term goal because I’m still hoping I’ll hit some kind of long awaited growth spurt. (I’m 5′ 4″ and I could still grow!) So, hopefully, the number of vegetarian and vegan recipes on the blog is sure to grow. At the very least, there will be various options to accommodate these diets. I’m so excited!

I’ve really been slacking off on the blog. I have a lot of work to do, fonts to change, themes to look through, codes to crack, all that good stuff. 😉

So without further ado, here are my consumptions for the day.

For breakfast, I had a cup of joe with some Trader Joe’s  soy creamer. I also had a mug (because who doesn’t love food in mugs?) of overnight oats.

  • 1/2 cup almond milk
  • 1/2 cup water
  • 1/2 cup unsweetened applesauce
  • 1/4 rolled oats
  • 3T wheat bran
  • 1/2T coconut flour
  • 1t maple syrup

Throw everything into a bowl (or mug) give it a stir, cover, and chill overnight. In the morning, I like to nuke it cover for about 1.5 min. to warm it up. It’s just a preference, if you don’t want it, don’t do it.

 For lunch, I should’ve had the banana and grilled cheese I pictured here. But guess what I did?

I walked right out of the house without my lunch box. Nice.
