“All for One” Brownie

I did something exciting.

Actually, I did multiple exciting things! Three to be exact. I’m in a list making mood so I’m going to list all three.

1. I made my first online food order ever! It was through iHerb and I was extremely happy with how everything turned out. I thought it would be really scary and confusing (apparently I’m easily scared and confused), but it was super easy and much cheaper than buying everything retail. (I’m looking at you, Whole Foods.)

I staked out my front porch on the scheduled delivery day and, when it came, tore open that package like a kid on Christmas. Erythritol, almond meal, and stevia galore! I was thrilled. I am such a dork.

Actually, I was so happy with how everything turned out that I now have a schmancy (it’s like fancy, but better) coupon code for iHerb. If you just enter code EFI540 at checkout on your first order, you get five dollars off! I even designed a brand spankin’ new button to showcase this which you can find in my far right sidebar.

2. I parted my hair to the side one day!

3. In retrospect, I should have put this first, but I made the most amazing brownie ever. Possibly more amazing than my amazing low carb brownies. And that’s saying something.

The particularly amazing brownie in question can be made in the microwave in less than two minutes, is vegan, gluten free, grain free, sugar free, low carb, low fat, and less than 60 calories for the whole thing! Pretty darn amazing if I do say so myself.

Now, you will be needing xylitol or erythritol for this recipe, but worry not for you can buy it at iHerb with that super special coupon code I just gave you, or you can get it from my new Amazon store!

I don’t consider myself the most technologically savvy girl on the block, so being able to fumble through these things successfully is a huge accomplishment for me. I never ever want this blog to seem like a product advertisement, so don’t ever feel like I’m trying to push products on you. I’m not. I just thought it would be nice to gather all the crazy ingredients I call for in my recipes into one convenient place for you. Sound good? Cool!

So anyway, you seriously need to make this brownie. You deserve it.You need it. Treat yourself! Why, you may ask? Simple.

Every girl should have something tall dark and handsome at her beck and call.

“All for One” Brownie

This is the quintessential midnight snack.  Just know that erythritol/xylitol can be hard on your GI track, so be aware and know your limit.

Serves one

Nutritional Info

Serving size: 1 large brownie (entire recipe)

(Calculated with erythritol)

Calories: ~60

Fat: 4 grams

Ingredients

1 Tablespoon erythritol or xylitol

1 Tablespoon almond meal

1 Tablespoon unsweetened cocoa powder

pinch baking powder

pinch salt

2 Tablespoons applesauce

1/4 teaspoon vanilla

Directions

In a microwaveable mug, combine erythritol or xylitol, almond meal, unsweetened cocoa powder, baking powder, and salt. Add in applesauce and vanilla and stir until thoroughly combined. Microwave for a minute to a minute and 30 seconds, checking often to gauge done-ness. It took about 2 minutes in my microwave, but my microwave is older than I am.

 

 

Finally! A brownie recipe where I am supposed to eat the entire batch. It’s about time.

    Yet another wonderful recipe! I love your Amazon store, it really shows your staples (which I ALL want :p). Unfortunately I don't have a credit card, so ordering from Amazon or Iherb isn't possible :'(. I see your store also has Better N Peanut Butter, which I haven't received unfortunately..but I can't blame the company, the Netherlands ís pretty far away, haha! Keep up the great work Kelly..one day I'll have a creditcard, and then I'm probably going to make every single recipe you created!

    whoaaaa it's so weird how half of the time, you and I make the same kind of treat on around the same day~you're a girl after my own heart Kelly! hehe. Tonight I made a single serving brownie for Greg, but it's with flours, choc protein powder, etc. :D

    thanks for the heads up again and I just sent this link to my friend - she is the queen of erythritol and is GF. I have so much stevia/baking blends that I don't use. I just use the pure stevia powder or the liquid drops but never the erythritol - need to try it!

    How would you say this compares to the "amazing low carb brownies recipe"? Looks like the main differences are this one has no egg and ups the apple sauce amount.

    Hey Kelly, I just discovered your site this week (via the Trim Healthy Mama cookbook), and have been obsessively reading your recipes every night and trying new ones every day (as I am able, while waiting for my ship of interesting ingredients comes in!). The single-serving banana bread was wonderful and this brownie recipe saved my sanity, and possibly my life, in the midst of a huge "I need gooey sweet chocolate" mid-afternoon meltdown today.     This does not look all that great but it was my first time to try a desert in the microwave and it came out so good and gooey except my cocoa powder was more bitter than sweet. Still good for 60 calories and it satisfied my chocolate craving. Thanks ! :)

      Thank you, Nada! You aren't likely to achieve the same results, especially because the size of this recipe is so small. It would seem that exchanging one tablespoon of flour for another wouldn't make much of a difference, but because of this dish's proportions it's not recommended. However, there's nothing wrong with a little experimentation! Good luck!
