    just wanted to say i absolutley love your blog and all ur amazing creations im so happy i found it! your seriously an inspiration! i made TWO of ur recipes again today! i made the low carb "Cocnut oatmeal" and i threw in some chopped fresh kiwi while it was being made it was good but iliked it better without the kiwi nd i made the choclate protein donuts which i originally made as cupcakes/muffins which were TO DIE FOR! and this time i tried to make cookies but it didnt rly work =( either way im trying ur bagel and new donut recipe sometime this week! can NOT wait! thanksfor everything ur amazing!

    Kelly, My name is Howard. I tried your Instant Almond Butter recipe and it came out just great. Can you please explain how you calculated the nutritional breakdown -- calories, fat, carbs, etc. I have a bag of Bob's Red Mill finely ground Almond Meal. Accord to the label on the bag, there are 160 calories in 1/4c (28g). How did you derive your caloric breakdown? Thank you. Howard

      Hi Kelly, My question is along the lines of the above post. I use the same brand of Almond Meal as you. I am aware of how you calculate calories, however, even using your calorie formula and the same brand ingredients as you, I do not come up the same calorie counts as you, especially with regards to your recipes using Almond Meal. For example the Red Velvet Fudge. Your calorie count for the entire recipe is less than the calorie count of the individual ingredients. Can you explain, please. Thank you, thank you!

      Thank you so much for reading! Welcome aboard! I use coconut flour becuase, in my opinion, it is just better than wheat flour. Coconut flour is grain free, gluten free, low carb, and lower in calories. I also happen to be completely in love with coconut, so the subtle coconut flavor is a plus for me.     Just came across your Almost Calorie Free Caramel Sauce & want to try it - but wondered if there's anything missing in the recipe? Seems to me that 1/2 cup xylitol w/ only 1 tsp agave wouldn't create a thinnish sauce like your picture shows - correct me if I'm wrong - just didn't want to have a flop on this attempt :) Thks much,

      Thank you so much for the question, Lori! You will not be having any flops if I can help it! ;)The xylitol in this recipe caramelizes much like sugar would, producing a very thick and rich caramel sauce. So no worries about it being too thin. Thanks again, and I hope this helps!

    Hi Kelly...a quick question. I cannot use the egg replacer that some of the recipes call for as they are not gluten free...well, not the ones I have seen anyway. I was wondering what your spin was on using flax eggs or chia eggs (making them into a gel and incorporating them into recipes) as a binder. I have not had much luck baking with coconut flour and I refuse to waste one more egg in my learning process. I would like to make coconut flour crepes. I have been making your low carb chick pea flour tortillas and absolutely love them....but want to rotate them with the coconut flour. I would love your advice for gluten free egg substitutes before I even try this out and waste anymore of my very expensive ingredients. My favorite brand of stevia is NuNaturals (you can buy it here), but I don't know off the top of my head how many grams are in a packet. I do know that Truvia has 3.5 grams in a packet.     Hi, I just stumbled across your website, and now have plans to make your low cal coconut butter tomorrow. I was wondering if you could cook with it? On another note, I don't understand how your "low cal quinoa" is any different from how one normally prepares quinoa. I've always just made it with quinoa and water. Am I missing something?

      Hi Charlotte, and thank you so much for the question! The reason my quinoa recipe is different than others is that it is just cooked in more water than other recipes, so it absorbs more water and becomes less caloric. Thanks again, and I hope this helps!

    I stumbled upon your website looking for healthy cookie recipes. I was so surprised to learn about coconut flour. I went out and bought some right away. I have made your chocolate chip cookies about 12 times and am baking up a storm with coconut flour! One day I started browsing through through your blog and was shocked at how young you are!! I wish I would have been making healthy choices at your age. What a blessing for you to be so aware of the importance of taking good care of your body.     I came across your website recently in search of low calorie recipes for my younger brother who snacks all the time! Unfortunately, its not doing very good for him... Your recipes are genius! I am really looking forward to making all this food!!! ^.^ I just have a question though, I've never used Stevia, and I live in Australia where Nunaturals isn't a brand, so I'm planning to buy it online. However, I'm not sure which one to use, the liquid, powder packets, or both? Thanks so much, you're amazing! I'm around the same age as you, but I would never have though of these recipes!

    Hi Kelly! Wanted to thank you for such an amazing site -- but I also had a couple questions that I've been trying to find the answers to: 1 - is coconut powder and flour the same thing? I think flour is from ground coconut pieces, and powder is from dehydrated coconut milk - does this change their nutritional value and or the way it acts in a recipe? 2- I've been reading recently about using peanut grounds/peanut powder as a healthier option in recipes calling for peanut butter. Have u experimented with it at all?! Thanks again!

      Hi Jamie! Sorry for the late response, but I hope I can still be helpful. 1. You are not the first person to ask about coconut flour/powder, but my research has turned out to be inconclusive. I have not worked with coconut powder and do not know how it acts, so unfortunately I don'think I can be of too much assistance here. If you test it out, could you please let me know how it goes? 2. Yes! Peanut flour (defatted ground peanuts) is a miracle ingredient. I have actually used it to make my healthier, low calorie peanut butter here. Thank you,and I hope this helps!

    Hi Kelly, me again, sorry... I'm just wondering, what type of coconut flour are you using? I noticed you use it in almost every recipe and you say they produce very low calorie foods, but when I searched up the nutrition info of coconut flour 2 tbsp provides 60 calories! So...what is this amazing coconut flour you're using? haha And is peanut flour lower calorie than coconut flour? Can we substitute that instead? THanks!

      Hi Sj! Please accept my apologies for the late response. I use either Bob's Red Mill or Let's Do... Organic brands. Technically there are 60 calories in a 2 tablespoon serving, but only about 40 NET calories. This is because coconut flour is so high in fiber, and your body does not absorb the calories in fiber. Hope this helps!

I'm just wondering, where can I buy this? I live in Australia, Melbourne, and I can't find any coconut flour defatted peanut flour, or even raw, organic coconut flakes and peanuts! I really hope you can help me out... What type of coconut flour, peanut flour, coconut milk, almond meal and almond milk do you use? Also, what brand of xytlitol do you use? I'm a newbie at all this :3 Oh, and-unsweetened cocoa powder. WHERE DO I BUY THIS???!!! How do you differentiate the sweetened and unsweetened cocoa powders? Is the calorie difference high?       Again, I'm sorry for getting back to you so late! Thank you so much for your kindness! You poor thing! You can buy all these specialty ingredients online for a great price at iherb.com. I use whichever xylitol brand is cheapest, but I really use erythritol now because that is the calorie free sweetener. ;) As for unsweetened cocoa powder, it's actually quite easy to find. As long as it's not labeled "hot cocoa powder," doesn't have any added sugar, and is 10-20 calories a tablespoon, you should be good to go.

    Could you create: -Caramel slice with your almost calorie free caramel and healthy homemade "chocolate" -Caramel chocolate- chocolates that contain caramel in the middle, made with your almost calorie free caramel and healthy homemade "chocolate" -Healthy tart recipe (for apricot tarts, apple pies, strawberry tarts etc)-made with possibly chickpea flour? I don't know, you're the artist! -A SCRUMPTIOUS cheesecake that tastes like cheesecake......not the least bit yoghurt-y, as I can't stand it :( -healthy, low calorie puff pastry. Or pastry.     Hi Kelly, I love your recipes. I'm 15 and just went on a low carb diet since I got very sick a few months back and gained about 25 pounds. I'm only 5'0 and used to weighing no more than 107. In your bio you mentioned you dropped about 40 pounds in as little as three months! HOW??? You have no idea how much I would kill to be able to drop that quickly. How many calories were you eating in a day? Were you excercising at all? Please give me the inside scoop! I am desperate. Your recipes are divine and I love that you are so young, beautiful, and insightful. It's nice to know that someone aound my age cares about what is going into their body as much as I do.     Hi Kelly! I love your website, it's so inspiring to try new recipes! I was recently diagnosed with a lot of allergies at the beginning of Febuary (which is a whole new world for me) I'm still learning what to eat and what not to eat. I want to try a lot of your recipes but I'm unsure of substitutes I could use in place of certain things I'm allergic to. Can you please help me?! :) my #1 allergy is yeast and I'm also allergic to gluten, wheat, oats, barley, dairy, vanilla bean (so anything vanilla or almond too) no extract for me :( I can't have chicken egg anymore so I've switched to duck egg which is working great! :) I also use coconut flour now and I can do flaxseed. Was hoping maybe you had a few recipes or substitutes I could use in place for some of the ingredients you call for! Oh yeah and I can't do anything fermented so no vinegar or chocolate! Please help! :)

    Hi Kelly, Nice site you have! I love your idea about the almond butter, but I'm still trying to figure out where did the calories go just by adding almond milk ? Are they being diluted by the milk, but then the almond milk also has calories, hence, I'm in brain-lock !

      Thank you Natasha! The way it works is that when you grind almond into butter, they lose half their volume but retain the same amount of calories. In this recipe, you retain the volume with the same amount of calories, so the calories go down by half in comparison. Unsweetened almond milk is much less dense calorie-wise than almonds. Hope this helps!

    Hi there, Read your recipe on chickpea flour pasta, I noticed that you had trouble in finding a subdtite for eggs to make a vegan version. You can try this one that I have used. 1 teaspoon of chickpea flour 1 - 2 tablespoon full of water Whisk the two together till you have runny mixture, this should resemble an egg that has been whisked. Add this to the flour to bind it. As an alternative, try corn flour or rice flour or potato starch. My best success is 1st Chicpea, then potato starch, rice corn. Good luck. Love the freshness of your style.

      Thank you for pointing that out! Yes, I see the problem, and no it is not right. I'm working on it now. Meanwhile, there is a categories drop down menu in the sidebar, so you can just click on low carb or search for low carb in the search bar in the header. Hope this helps!

    Kelly, I can't get over that you are only 15...i discovered your site looking for low fat/low carb and low sugar CLEAN recipes. I am obsessed with your "all for one" cakes (and my recent all for one cinnamon bread is my FAVORITE). Last week i tried the cauliflower risotto and it was so delicious, i shared it with a fitness group of 100+ people...i haven't had rice/cheese in several month and this recipe was insanely good!!!!!     I am really digging your site and have already made a couple of the recipes and commented on them. I notice many of your recipes call for bananas and/or applesauce. Is this to replace an oil? And if so can I substitute evenly? Or say if you call for "one mashed banana" how much oil would that be? And if not oil, then what would you suggest? I am low-carb and high fat (aka "ketogenic") so I don't use bananas or applesauce at all, but oil is A-OK! I also wanted to say I really commend you for taking hold of your life and health now, at such a young age, and then coming up with all these fabulous recipes and wonderful pictures to go with them! Kudos to you :D

      Hi Deana! Yes, I use applesauce/mashed banana to replace oil, and I do believe you can sub in oil for it. One mashed banana would be approximately 1/2 cup oil. Thank you!

    Hi! :D I'm Olivia. I love your website. I was just wondering if you could help me out with something.. I'm the youngest in my house (I'm 11 and my brother is 19) and my family has a very fast metabolism so we are all used to eating fairly unhealthy, and I realized how important it was to be healthy so I decided to start trying to make some changes in my eating habits. But.. then I turn around and the junk food is everywhere. So it's been a little hard to set my mind on it, I do simple things like getting water instead of soda when I'm out to eat and I do fine until I return home, my mom buys me my own fat free milk and whole wheat bread though.       Hi Olivia! I so feel for you. I was 12 when I had your revelation (way to be ahead of the game by the way!), and it's not easy. Do you do a lot of cooking? Taking on more cooking responsibility really helped me stay healthy. It's just my mom and me in the house and she was going through chemo at the time, so it was actually a relief for someone else to take on the grocery shopping and the cooking. Perhaps you can suggest doing more of the shopping/cooking in your house? It might be harder for you because you live with more people. It's really good to learn just for life, you get to eat all the healthy tasty food you want, and it's super fun. Please let me know how it goes! I'm excited for you. ;)

    Hey Kelly. For a young gal, I'd say you're on your way to success with some of these recipes. Can't wait to try the pancakes. Have you thought of using Muscle Milk with this? It's not gritty like whey protein. I use blueberry Muscle Milk usually with Bisquick but trying to get away from a lot of wheat as I try to introduce paleo eating more and more.     Good recipe but not as healthy as you may think. Baking powder is an evil ingedient containing trace amounts of aluminum. I did like the fact you were able to get around the yeast.

    Hi- Just made my 1st loaf of your Healthy Yeast Bread... Some thoughts: (1) 24 slices isn't possible - you need to correct this error quickly since folks are getting more than twice the number of carbs they bargained for, and some people may angrily assume you're fabricating data. The fotos show what a small amount of dough is involved - I'm guessing that 10-12 slices is more like it. (2) My dough was too soggy to start with, and even after an extra 15' baking, still not done in the center (it was too late for me to add more flour prior to baking since I'd already returned it to the freezer!). (3) No flavor to speak of - very blah; not enough salt. (Don't pay attention to all the experts about salt and heart disease,k etc. etc. - look up the actual studies and you'll find NO causal connection.) However, I'm 74 and my taste buds are in about the same shape as my eyes, ears, hair, knees, feet, etc. etc., so maybe my judgment shouldn't be considered at all. (4) Most of these wheat-substitute breads don't taste good at all in the bread stage, but really perk up when toasted - yours didn't, I'm afraid. (5) Never did either smell or taste the yeast - bummer. I truly don't understand your gushing enthusiasm about this bread, unless it has to do with your age and relative lack of baking experience. So sorry - I was very hopeful.

    Just found your site and love it - I can't wait to try these low carb recipes. I was diagnosed at the beginning of the year with insulin resistance/PCOS. I have been on a low carb, low sugar, high protein diet since then. Some days it is a struggle to find something "healthy" that doesn't taste terrible. Especially desserts and breads.     Hey Kelly-- I'm new to gluten free as well as nut flours. I have made a number of items with mixed results. My question is do you use a scale or spoon in the flour in a regular measureing cup. Most of the recipes I use I have to use a scale but then again some of the recipes I use don't whick is why I think I get mixed results. Please clarify for me.     Hi Kelly I just used your coconut flour pancake recipe as a base inspiration for pikelets, they were excellent. We ate them with reduced sugar rhubarb and strawberry jam (made by Mum) and whipped cream. my variation was 1/3 cup coconut flour 1/3 cup buckwheat flour 2 eggs (the whole thing) 1 cup of milk 1 tsp stevia 1/8 tsp cinnamon 1/4 tsp salt. made about 12, cooked in the usual pikelet way thanks for the inspiration!!!     I am wondering why you use erythritol in some recipes and stevia in others. I have been reading about this erythritol stuff and it doesn't sound very healthy at all. Can I substitute stevia in those recipes that call for sugar OR erythritol? Want to try a couple of your cookies/breads. They sound wonderful! Thanks for the blog! Kathy

      Great question Kathy! It really depends on the recipe, but for the most part stevia cannot be substituted. The texture, flavor, and sheer volume of erythritol is comprable to real sugar, and while I adore stevia, it is indeed quite different from sugar. Have you tried using eryhtritol/stevia blends such as Truvia?

Scouring the internet for healthy food blogs, I came across yours and now I'm really excited. I don't want to take up too much of your time, but I would appreciate any advice you could give me. My name is Ann-Cathrin Guertler and I'm 16 years old. After changing my eating habits to lose the 30 pounds that made me overweight (the right way), I found my love of healthy cooking. This was a little under a year ago. Since then, I created a healthy cooking class at my school and taught the first session to a group of 21 students (teaching seniors as a sophomore is terrifying- but it all ended well). Now I am looking to start a healthy food blog targeting teenagers and college students. I would like to emphasize that healthy meals can taste delicious and be easy to make. I am looking at wordpress.org as a website and blue host as a host. My biggest concern is the process of building my audience. Do you have any tips I should know before embarking on this?     Hi Kelly, Love the website and big congrats on all your success. I recommend, though, that you get the webmaster to either change the font color along your top banner menu or change the background. Almost impossible to read the white pulldown menu titles against that newsprint background. Sure they turn red when you mouse over them, but that requires people to see the selections in the first place. Just my thoughts. Love, love, love the photography on the site. -Brian

    Your website looks fascinating, but needs some tweaking for readability. The background on your banner across the top, combined with the white lettering, is almost impossible to see or read. Some of the pages it shows up better than others, but for instance, on https://www.foodiefiasco.com/single-serving-brownies/ ... I just can hardly make out the lettering. It's very pretty, but pretty isn't useful if it can't be read. Keep up with the good work, though ... can't wait to try your single serving brownie. june

    Dear Kelly, My name is Marie and I love your website. I al addictie to it!! Really... (Don't be scared!) I live in Belgium. To be honnest, belgians know how to bake bread... But affortunately, they are high in calories and carbs... So to satisfy my cravings, I made a recipe with brocolli. So you need 100 grams of all purpose flour, 4 eggs (or egg-replacer), 500 grams of brocolli and 1 tps of baking powder. You cut of all the flowers from the brocolli and put them allang with the eggs or egg replacer in a foodproccesor units no chunks remain. Than you add the other ingredients. You can shape them however you want. Bake them in an oven on 400 degrees for 20-30 minutes (untill golden on top...) let them cool down and done! Can you try this and make the recipe better? You can also have it to put it on your website... It would be such an honour!!! Again, I love you! And thanks for everything!

    Such yummy recipes, thank you Kelly M. Do you ever sell any food products you make to coffee houses or bakeries?? If not you should. I would love to learn how much time some of the recipes take to make from start to finish. What would you recommend to organize ingredients?, such as flour, sugar, chocolate chips and so forth.     Really like the protein bar post. I found it because I was eating a quest bar and thinking it was good, but expensive, and how can I make my own? I'm looking forward to trying the recipe! If you're brainstorming other flavors I'd like to throw my hat in the ring for chocolate chip cookie dough :) Always a big weakness of mine Thanks!

    This is one of the best food websites I have ever come across. Mostly, I find a good healthy recipe website (and there are a lot out there), I ogle the recipes and maybe give one or two a try. But with Foodie Fiasco, it is the ONLY food website I have as a saved favourite AND I've tried STACKS of your recipes so far and they are all so fantastic!! I am totally loving being able to have a good healthy day and finish it off with some completely awesome treats from your site. Tonight for supper I'm having "The World's Healthiest Ginger Cookies"... ALL of them!
