In case you haven’t noticed, I have a huge thing for coconut flour. We’re kind of an item.

You have no excuse not to make these recipes anymore because Let’s Do…Organic is generously giving away a bag of coconut flour to three lucky Foodie Fiasco readers!

How to prepare for such a special event? Coconut flour deliciousness overload! Duh.

I started using coconut flour after coming across it here on Foodie Fiasco - for the past two years, however, I've been a coconut fanatic: oil for my skin, oil for my hair, oil in my foods (even coffee), shredded finely, not-so-finely, in water form, in milk form, in powdered milk form (which proved to be really handy for oatmeals/smoothies/chocolates/etc)... but I had never tried the flour. Until I found it here. I love eating it plain by the spoonful for a quick bite (is that wrong?) but I usually toss one Tbs coconut flour with one Tbs nut butter + cinnamon/ginger + 1/3 handful raspberries (if feeling sweeter than usual) and throw it all in the magic bullet for a post-workout revival.

I am DYING to try coconut flour. I am from Canada but have been living in Scotland for the past year and a half. It is next-to-impossible to get all the awesome healthy ingredients (such as coconut flour .. and things like stevia, almond flour, almond milk, and even applesauce! etc). If I do find them they're so expensive I kind of want to cry. I have however made your fudge by buying flaked almonds and blending them to a pulp! Delicious! Kayla
