I don’t think this should take very long to explain.

I could just say: “Hey look! I’ve morphed Mounds bars and fudge together and magically made them healthy to create one of the greatest desserts this world has ever seen. You should try it! Now!” But because that isn’t nearly long enough of a post, I’ll tell you this joke to flesh it out entertain you.

So this Mounds bar walks into a candy store and meets this piece of fudge. Noticing their mutual chocolatey goodness, they decide this was fate and they are soulmates. Shorty after the wedding, they have a beatiful baby named Moundbarryfudge.

 

As little Moundbarryfudge gets older, his delicious parents realize he took on one very prominent trait from the crazy aunt: he was healthy. At lease try to look surprised when you find out that the crazy aunt is me.

This is at first quite shameful, but the whole family of candy (even the Almond Joy in-laws!) realize this was meant to be and they all change their ways to become healthy as well. So that is why all candy is now healthy and everyone lived happily ever after in our size two jeans. The end.

Oh wait. That was supposed to be a joke, wasn’t it? But hey, you can never turn your nose up at a fairytale where the whole world turns healthy at the end, right? Exactly.

This Mounds Bar Fudge is indeed a fairy tale within itself, so I actually think this is quite fitting. Just likeMoundbarryfudge’s parents learned in this story, we should listen to what fate is trying to tell us. Fate was telling me I needed to turn my joke into a fairy tale. Don’t judge me.

You still want a joke? Fine.

Why did the chicken cross the road? To get to the other side. Nope. To get to your house!

Knock, knock. Who’s there? The chicken!

There. Happy? Of course you are because you now have fudge. And a(n extremely clever) joke. And a fairy tale. And fudge.

Mounds Bar Fudge (Vegan, Low Calorie, Grain free, Gluten free, Sugar free, Low carb)

Should I have  Mounds bar? Should I have fudge? Make the low calorie choice and have both! Does it make sense? Who cares because it sure is yummy!

Adapted form my World’s Healthiest (And Easiest) Fudge and Instant Low Calorie Cocoa Bliss

Makes 10-15 pieces

Nutritional Info

Serving size: 1 piece (1/15 of recipe)

Calories: ~4.5

Fat: ~0.3 grams

Ingredients

2 Tablespoon unsweetened shredded coconut (I used reduced fat)

1 teaspoon coconut flour

2 Tablespoons coconut almond milk (you could use regular almond or coconut milk, too)

1/4 cup mashed banana, pumpkin, or applesauce (Choose this carefully, as it will determine the flavor of your fudge. I tried banana and pumpkin, and while pumpkin was great, I thought banana was best in this.)

1 Tablespoon unsweetened cocoa powder (Carob powder is great, too)

sweetener to taste, optional (I used one packet of stevia.)

Directions

Mix together unsweetened shredded coconut and coconut flour. Add in milk and stir until combined and uniform.  Add in mashed banana, pumpkin, or applesauce, cocoa powder, and sweetener to taste and mix until incorporated. Spread it into a container (plastic works very well for popping the fudge out) and freeze until solid. You can keep it in the freezer for extended period of time like I do, but you may need to let it thaw at room temperature for a but before eating.

And you’re totally welcome to eat the whole batch. Just throwing that out there.

    This looks amazing!! And it's so easy too. I have a quick question... Do you know if i can use anything in place of coconut flour? Like almond flour perhaps? Thanks in advance :)

      Thanks Valentina! Hmm. The coconut flour is important for the filling of the texture, but I think almond flour could work in a pinch. Please let me know how it goes!

    I made this with banana and don't really see how it's 'fudge.' It came out of the freezer and I let it thaw a bit, and it melted into glop. Chocolate banana coconut glop that tasted okay, but still. Not fudge. :/ Also it's an absolutely tiny amount. I don't know how you got those cubes in your pictures; if I cut mine into 15 servings they would each be the size of a stack of two quarters.

    I didn't really like the frozen texture of these so I put it in the fridge and it thawed back out to it's gooey state. At first I was like crap now I have to throw it away but then I had an idea. I put it on my favorite low calorie toast as a peanut butter replacement. So good, and it saved me about 190 calories!
