Hi Kelly. I just want to say that your website is impressive, but even more impressive since you are only 16! You are obviously very intelligent, very capable, and very motivated... you are going places!

Wow! Love your single-serving vegan recipes. Healthy, low-cal, quick, easy. You're a gem! Hope your mom is doing better. I fully expect to see you on The Food Network someday. Lots of love, Natalie.

Actually, instead of The Food Network, I think you should go to agentquery.com, find an agent that represents cookbooks, and pitch an idea for single-serving low-cal cuisine. Hungry Girl has made alot of money on her books. But you're way better than Hungry Girl because it's not all processed junk. I would totally buy your book! Good luck!

Hi i just tried this am coconut pancake.recipe of yours. I just wanted to ask is it supposed to be clumpy After u whisked everything together? Then when i placed it in the pan it's not sticking together. I tried 3 pancakes results were the same. Everytime i turn the pancake it breaks apart. The result were clusters or balls of flour. How did u make it like in the picture? Well i ended uo throwing it in the grabage even the batter.. any tips?

I'm sorry that the coconut flour pancakes didn't work for you, Maria! The batter is not meant to be clumpy; did you stir the mixture for a long amount of time? It takes a little elbow grease to get all of the ingredients to harmonize! Also, make sure that the pan is completely heated and sprayed before plopping a pancake on top. If you have followed the above instructions and the pancakes are still crumbling down, perhaps try whisking in a bit of coconut oil for added moisture, although I have never tried this and can't guarantee positive results! Hope that this helps:-)
