Cauliflower Rice a Roni

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • salt + pepper
  • 3 cups riced cauliflower (you can do this by putting cauliflower in your Blendtec or simply grating the cauliflower)
  • 3 cups vegetable broth
  • ⅓ cup nutritional yeast or grated parmesan
  1. Heat a large skillet, greased with oil or cooking spray, over medium high heat. Add in the diced onion and cook, stirring often, until slightly golden, about 5 minutes. Add in the minced garlic along with a sprinkle of salt and pepper and cook for another minute or so. Add in the riced cauliflower and cook until slightly golden, about 3-5 minutes. Add in ½ cup of the broth and cook, stirring often, until absorbed. Repeat with the remaining brother. Stir in the nutritional yeast and cook for another five minutes. Salt and pepper to taste, and feel free to add any other spices that strike your fancy (I love dill or rosemary in this).
