    Just tried out your pancakes (with egg whites) with my son who has recently been found to be allergic to gluten, dairy, and egg yolks. It was a success, and I thank you for that. I would love it, though, if you would post alternative sweeteners (e.g. 1 T maple syrup instead of Stevia). Your posts could have great appeal to the Paleo crowd, but they generally don't go for things like xylitol, stevia, etc.. I think what you are doing is very impressive for your age. Keep it up!

      Hey! Get off her back and get off your high horse!!! If you can make the sweetener exchange to maple syrup by yourself, why don't you just do it?? Why ask somebody to go out of their way to make adjustments for you? She's cooking sugar-free. Why would she include an ingredient with sugars? You're arrogant!

    I would love a low carb bread recipe using yeast. I am on Atkin's not Paleo so there is a difference as you know. I don't like Atkins baking mix as I fell it is to high in carbs. ty

    Kelly, I am amazed at your talent for cooking! I am challenged in the kitchen and love your simple, yummy recipes because I hate to cook. I am a grandmother of three gorgeous little girls (yes, I am old!) and I spend so much time sewing for them that I have no time to cook. My husband & I backpack and like to eat healthy when we are not on the trail. We'd like to go vegetarian and with your recipes we just might! My blog has been inactive for sometime since I started my facebook page--Anna Bella Heirlooms, and my etsy shop of the same name. Just getting started on those and I'm not very good at it. Gotta get back to blogging, but...I'm not very good at that either. I am great at sewing, jigsaw puzzles and eating! Yum!! Thanks for letting me join the family!

    Kelly, First, let me say how much I've enjoyed reading your preambles to the several recipes I've copied, varied, and mimicked. The pancakes were a no go for the fam, but the bagels are now requested each week.     I stumbled upon your blog while looking for a healthy pizza crust recipe. I like your approach of bang-for-your buck HEALTHY recipes! I think we are on the same wavelength when it comes to food, which is awesome because I enjoy cooking, but with constraints like dairy-free, easy-to-find ingredients, time-sensitive, healthy and tasty I sometimes find it hard to get recipes that are suitable.         Yes that's basically all I eat for breakfast, but I love cereal! The ones at the store are all either low protein/fiber or really high calorie though.

    I'm happy to find your blog, Kelly. You're an obviously multi-talented 15-year-old. Your food photography makes my mouth water, and I'm impressed with your recipes. Follow your dream, and you will attain it. Why did you call your blog "Foodie Fiasco?" The word 'fiasco' means complete failure, and your blog is the exact opposite. "Foodie Fiesta" or "Foodie Feats" would seem to fit it better. Of course, you may have your reason for the word which I haven't as yet ascertained. At any rate, I'll keep reading and will share.     Looks Fabulous! Love your site. Question: Would chickpea flour work with other non grains to make a really great tasting and texture homemade pasta. I have been experimenting with different ingredients and just haven't come upon the Wow factor. I have a large family and we love homemade pasta, but time to watch health, carbs ect.

    Kelly, The condensed almond milk looks great but I was wondering if you or any of your followers would know if it would work with home made almond milk. I really hate using store bought when making it is easy and has no additives. On the other hand, it might be there is something in the store bought that would make the condensed version doable, and the home made, not so much. Thanks!

    Love your words! Really want to see your recipe for pumpkin bread. Wondering if youve experimented with chia gel replacing 1/2 or 1/3 the oil/fat called for in recipes (gluten free brownies worked very well with 1/2 chia gel replacing 1/2 oil and were approved by my foodie friend who didnt even KNOW about substitution!....except for the tiny seeds stuck in her teeth after! Ha!) Keep it up!

    Hey! I just LOVE your site, its fantastic. Only signed up for the newsletter now for some reason - im an idiot!! I love to try out your recipes all the time, but unfortunately, quite a lot of them just dont work out for me! It could be because i live in Ireland, and we don't have a lot of the ingredients you list in your recipes and i have to substitute what i can. We dont have erythritol (although i have been able to buy it online - its just so expensive!!), almond flour/meal (can you tell me is this the same as Ground Almonds? Because that's all we have!!), or any of the low fat items you use like low fat peanut flour, shredded coconut or better'n'peanut butter (stupid Ireland!!) - at least we have coconut flour - dont know where i would be without it!! Do you think, if at all possible, when listing ingredients you could give the weight (eg 1/2 cup or 100g sugar etc), as we just dont work in cups and i never have a clue how to calculate properly how much of any of the ingredients to use! Is that possible? I know some cup to gram measurements but not all of the ones you have listed. It could be very helpful to other Non-US readers!! And another thing, when you give the calorie content of the recipe, do you think you may be able to list where you got the calories? (As i know you count the net calories etc - it can get a bit confusing for those who just like to know the total calorie content (im on a very very strict, very high calorie diet as i am suffering from an illness and my calorie content is strictly controlled, and it could also be helpful to those who dont like to count net calories either?)Sorry if i seem like im bugging you!! I just LOVE your site, and i hope some of my requests might help in my success at your AMAZING recipes. I mean, that all for one cinnamon roll cake? FRIGGIN FANTASTIC!!!!!!!! like holy god. its incredible. i actually cannot tell you how much i loooooove that thing. (its also sooo nice if you mix a little milk with some powdered erythritol/sugar and glaze it on top!! ooooooooooooh yum yuuuum!!!)     Kelly, You inspire me! In a world where kids want everything handed to them I am so excited to be witness to such a beautiful young lady like yourself, working hard for something you believe in! You ROCK! I have recently made the HUGE decision to stop feeding my precious family packaged (chemical laden) foods. That was really hard at first because everything we ate came from a box. But thanks to people like you who do lots of research, experiments in the kitchen and then share your findings, I am slowing but successfully making the change!     I loved your mini donut recipe. I'm a celiac, so when you used coconut flour I knew I had to try it. I made 14 of them because the mini donut maker only had 14 small things. I used the mushed banana which added so much flavor. Thank you do much!!!!

    Hi Kelly! I had a late night hunger pang, so I thought of what I could make quickly & easily with coconut flour. Trusty ol' Google led me to your page for coconut pancakes!! I just got done scarfing them down, & I must say that they were probably the best recipe I've tried. I changed some things around, but used your recipe as the base to make them.       Try stevia to sweeten things. It isn't bulky like sugar or Splenda so some baking recipes will not work out.

    Hey Kelly! I'm so glad I found this website because I love to cook but I am not creative at all but I googled coconut flour pancakes and your website was on the top. Good job, that means you have great receipts and your website is an amazing hit :) I just have a request?.. I would really appreciate if you included the expanded version regarding carbs if possible on your receipts! How many carbs are in your receipts or at least a rough estimate and also the fiber and sugar content that make up those foods. I am prepping for a bikini competition so I need to watch everything I eat and I need these essential groups. If not that's okay I'll just figure them out myself it shouldn't be too hard

    I just signed up for your news letter and I'm hoping you can help me. I am looking for a good bread recipe, but I can't have yeast, eggs, butter or any kind of flour made from wheat or milk. I can have buckwheat flour, coconut, teff and quinoa. I use hemp and coconut milk. I sweeten with stevia, honey, maple syrup, applesauce and bananas. If you know of a recipe I could use I would appreciate it for my allergies are extensive. The ones I listed above are just a few.

    I just made your zucchini bread and it is so good. Dense. Delicious. I used lemon extract instead of vanilla. Added 1/2 c oat bran, and 1/2 c. chopped walnuts. Baked in an Edge Brownie pan with multi-edges. Wow. Like eating a cake donut. Can't wait to try your other recipes!! Thanks. P.S. I did use a light lemon glaze on it when it came out of the oven. No one would believe it is vegan, & lo-fat.

    Hi there! I am a diabetic with horrible triglycerides (on a scale of 1 - 150, my number was over 3,000 three months ago - side note: down to 430). I am allergic to lactose (resulting in extreme head pressure and severe drowsiness) and discovered through process of elimination that I have at least a sensitivity to gluten if not a full-blown allergy. So, I am transitioning to a low-carb, dairy-free, gluten-free diet and looking for options other than grazing with cattle. I just discovered your website and I found options! (I tried your recipe for coconut flour pancakes and enjoyed them very much.) I say all this to encourage you and thank you for your efforts.

    Thanks for the amazing stuff. I love your recipes and the comments are absolutely great! I am a diabetic who recently decided to follow a high fat low carb way of life and it has been fantastic. I have dropped 2 dress sizes and feel so much better. Also exercise every day. The only problem is that I now need a brand new wardrobe and that is going to be costly.

    Hi! I just made your Healthy Banana Bread with the almond meal, using Beet sugar in place of reg. sugar and put some crushed walnuts in it, also, used the almond milk. WOW! So good and filling.     Kelly, My wife and I were at Sam's yesterday and saw coconut flour. We'd never known such a thing existed!! We don't like dairy milk and always use coconut milk. And I love to use coconut oil in coffee and other recipes. So how did we not know about coconut flour?!?! Needless to say, we bought it, but didn't have a clue what we'd do with it. That's when I googled "coconut recipes" and found your site for coconut pancakes. OMG Kelly, I LOVE pancakes, but my wife is gluten intolerant so that means that pancake sweetness doesn't exist in my house. I thought, "I've GOTTA make this happen!" So I followed your recipe precisely for the version 2 pancakes. I pulled the first pancake (I made a big 8" around hoss pancake) out of the skillet and threw on a plate. Before any syrup or toppings I hade to try is in it's raw state. First bite...I thought, "this tastes a bit different than I was expecting, but the texture was perfect!" Two chews in and I'm thinking "this is pretty good", then it hit me, the cinnamon, the chewiness, the sweetness, it was perfect!!!!!!! I gobbled up the whole batch and made another for my wife, she loved them!!! You are a genius!!! Perfect pancake and gluten free!!! Thank you, Kelly! You've got two new subscribers!!

    I'm diabetic and find that when I eat regular grains I not only feel bad because of sugar hike but get very blotted and uncomfortable. I'm not a vegan or vegetarian but I'm willing to take grains out of my diet in order to feel better. Do these recipes work for diabetics? Thanks. .

      Hi Socorro! Although not a diabetic (*knock on wood*), I have experienced similar blotting and discomfort. You should definitely check with a medical professional first, but I think eliminating/reducing grains in your diet can make you feel better. Good luck!
