Low Carb Spanish Rice

Ingredients
  • 1 medium onion, finely diced
  • 2 garlic cloves, minced
  • 1 medium head cauliflower, processed into rice
  • 1 cup salsa
  • 2 cups veggie broth
  • ¼ cup nutritional yeast*
Instructions
  1. Add the diced onion to a large greased skillet over medium high heat. Cook, stirring occasionally, until the onions are translucent and just starting to brown, about five minutes. Add in minced garlic and cook for another 1-2 minutes. Add salt and pepper. Add in salsa and cauliflower and stir until completed combined.
  2. Pour in 1 cup of the vegetable broth and stir until combined. Stirring occasionally, cook until the cauliflower has completely absorbed the veggie broth. Then, deglaze the skillet with ½ cup of the veggie broth and cook until the cauliflower has absorbed the broth. Deglaze again with the remaining ½ cup broth and cook until the cauliflower has absorbed the broth.
  3. Add in nutritional yeast or Parmesan if using. Stir in cilantro or parsley and serve! Devour.
