This recipe has changed by life.

And, as I am happy to report, it will change yours, too.

In case it isn’t laughably obvious, the food blogworld is filled to the brim with oats.

Back in the dark ages, I used to think these people were insane.

Eat more oats? The blog? Really?

So I had to try it out. I spent months perfecting this recipe. Months.

My calorie needs have changed since my original recipe, so it has an even bigger portion size than then, but check this out: Three Cups of Oatmeal for 180 calories. And remember, this may be the may the greatest oatmeal you’ve had. 

I know it’s the best I’ve ever had. So, a tip of the hat for the greatest breakfast out there.

For all the times it’s kept me full for 4 whole hours.

For all the tests it has fueled me through.

For all the hard days that would’ve been that much harder without a phenomenal breakfast in me.

Thank you, my oaty amazingness.

And I hope you, my dear readers, will enjoy these oats as much as I have. And, please, forgive me for talking to my breakfast.

The Greatest Breakfast in the World: Bottomless Oats Perfected (Vegan with Gluten Free Option)

This makes a GIANT bowl for only 180 calories. Life is complete.

Serves 1 very hungry person

Ingredients

6T rolled oats (can use instant and/or gluten free, if desired)

5T wheat bran (can use GF oat bran, but will not be as low cal)

2T coconut flour, divided

1.5 cups unsweetened almond milk (or milk of choice)

1.5c. water

sweetener, as desired (I use 1 packet of stevia)

Directions

In a pot over medium high heat, toast oats for three minutes, stirring frequently as they burn really easily, until slightly browned. Add water, almond milk, wheat bran, and 1 tablespoon of coconut flour and bring to a boil.

After boiling for 1 minute, reduce heat to simmer, whisk in coconut flour, and continue to simmer until desired consistency is reached. Add in sweetener, if desired, pour into a bowl, and top at will!

This one’s got unsweetened coconut, bulk bin granola, and Better ‘n pb on top.

I am in love.

      Coffee? Now you're speaking my language. ;) Checking the label now... yes! There is actually fair trade coffee in them, but not actual espresso. So, kind of?

    Those oats look so good! I can't believe you can eat that much for such few calories, and it keeps you full! And I cannot wait until those larabars are out in stores.. such great flavor idea!

    Oh-kayyyy! I'll come over to use that ice cream maker, because it's that important. :D Just yesterday I was telling Greg that it would be great to have it on our registry list! And these oats look soooooooo good and creamy....Mmmmm! But just a question and I am by no means wanting to be nosy! But are you sure that this is enough food for you, despite the massive volume? I just want you to stay healthy that's all! :) Still looks delish.

      Come one over and play with my new toy with me! We'l bust it out together. ;) You are not being nosy at ALL. Thank you for your concern, really. My oats used to be smaller, and I used to eat a lot less, but my dietician has me on 2,000 calories a day! That's probably reasonable for somone my age, activity level, and stats, but it seems like so much. So no worries, I usually go crazy with toppings and/or have tempeh bacon on the side. Thank you for caring, Ellie, and I can't wait to meet up with you again! Maybe after the holidays? Let me know!

    I love the addition of the coconut flour!! I always use wheat bran - well, until I ran out and forgot to buy more - but it adds a lot of healthy fiber and good volume! You got quite a nice christmas loot too - I'm glad I'm not the only teen who gets tons of foodie gifts!

      Thank goodness! I thought I was the only teen who asked for foodie gifts, too! It's nice to not be alone. ;) I mean, I asked for kitchen gadgets and a pair of socks. (A teenage girl asking for socks. Yeah, I'm really cool.) But we want our gifts to be practical (and potentially delcious), right? ;)

    I made these (finally haha) but I was wondering how long you let them simmer because mine still turned out pretty liquidy and I simmered for like a half an hour

      Thank you soooo much for making these! I really really appreciate it. ;) Since there is so much more liquid than oats in this recipe, the coconut flour is REALLY important. If the oats are too thin, I would just add more coconut flour. If you left the coconut flour out, then I think we know why your oats were too liquidy! Thanks again, and I hope this helps!

    This is on the stove literally right now. This is my second time this week making this - and you are soooo right! So filling! And since there are about a bajilion oatmeal recipes, I can really have fun with toppings. But, one question. How did you do the calorie count? When I put the recipe in a calculator, it came to about 300 calories. Which still isn't bad, but I'd LIKE to believe it's only 180. ;)

        Thank you so much for making this!!!!!! I am really sorry about the calorie confusion, and I definitely made a mistake in my math. As nice a number as 180 is, I'm not really sure how I got it. 120 for the oats+ 35 for the wheat bran+ 44 for the coconut flour (I calculated this by only using the net carbs in coconut flour)+ 60 for the almond milk= about 260 calories. I was wrong. I am very very sorry about that, and thank you for being so nice about it!

          1/3 C. oats (same as 6 Tbsp) is only 100 calories... And it can also depend on the type of Almond milk you are using... My favorite on, Silk True Almond Unsweetened comes out to only 45 calories per cup and a half.... and the coconut flour is 60 cal/2 Tbsp.... and the Wheat bran 40. So that brings us to a total of 245. But you could totally just cook this in water in place of the almond milk to bring it down to 200.... Which is pretty good if indeed this does make a large serving... I haven't tried this recipe (yet) but other voluminous oats recipes I have tried never seem to produce a great a quantity as promised. Another thing you could do to decrease calories is use oat bran in place of or for part of the oats. They are a little lower cal and higher fiber... but you would have to like the softer texture. Also, you can probably replace some of the coconut flour with psyllium husks for the thickening effect. Again, keeping taste in mind... I would only use a small amount of the psyllium in order to avoid it tasting like psyllium... not to mention they are super absorbent, so a little goes a long way with them! Now I am spinning with ideas!! Oh and cocoa powder makes everything amazing, so you could probably sub at least 1 of the 2 Tbsp. coconut flour for cocoa powder... won't have as much thickening power, but it's CHOCOLATE!!! (and has 20 cal/Tbsp. vs 30 for the coconut flour). Also, if you cook it with water, then you can add the almond milk on top and you've just increased the volume by 1.5 cups right there for no more calories than if you simply cooked the oats in it!! BONUS!!

" so, should i add the water+ milk before the wheat bran + 1T coconut flour? also, you said after letting it boil to add the remaining T of flour. after you said to whisk in coconut flour. is that on top of the 2T? thanks!

      Hi Olivera, and I am so sorry for the confusion! Yes, there is definitely something wrong with the directions in the recipe. I wrote it a while ago, but that is still no excuse. I haven't made this recipe in a very long time and it's too carb for me to eat now, so I'll be re-writing it simply off a memory. Here we go!     What brand is your wheat bran? I bought mine yesterday but it doesn't seem right.. the calories are WAY off. It's Wheatena wheat bran. I think the only other option was Hogdson Mill oat bran. Thoughts?

      Hi Rebecca! I use wheat bran from Whole Foods, and it's low in calories. Are you by any chance using wheat germ? It's much more caloric.

    What brands did you use? Even with using PB2, my calorie count for this recipe is 240. I used: -Market Pantry oats -Nutiva Coconut flour -McCormick vanilla -30 cal/cup almond breeze milk -90 cal/3/4cups generic wheat bran -stevia

    Wow! This is SO amazing! THREE cups for 180 calories?! How did you do that??? I don't think I have the ability to consume three whole cups in one sitting! That is a lot of food for very few calories!!! You are amazing! But can you tell me what brands of these items you used, please? The calorie contents in different brands differ! This looks like a very good meal!!
